Unagi (ウナギ) is the Japanese word for freshwater eel, especially the Japanese eel, Anguilla japonica (日本鰻, nihon unagi). Unagi is a common ingredient in Japanese cooking, often as kabayaki. It is not to be confused with saltwater eel, which is known as anago in Japanese.
Unagi has a crispy and firm texture, with a sweet, succulent rich flavour. Kabayaki is the process in which the eel is split in half and dipped into soy sauce before being broiled on a grill. This process gives the eel a unique soft, thick finish that feels as if the small bones are not even there at all.
